I didn't know about those demos until now, but I had heard an audience
recording of the London premiere, so your comments about the demos
puzzled me. I think the intention all along was to record the same
version of "That Lucky Old Sun" that was performed a year ago. For
example, as far as I can tell from the audience recording, in London
"Oxygen To The Brain" had the brass, woodwinds, backup vocals,
percussion, and every other element of the released version.
The demos use mainly keyboards and synths, drum machines, and a lot of
vocal overdubs -- a significant paring back from the material presented
in concert. With no other information than what I can hear from these
various recordings, I'd guess that the purpose of the demos was not to
rework the material, which was already mature in performance in 2007,
but instead to convince a prospective record company that Brian could
handle the vocal chores adequately in the studio -- no doubt a
make-or-break requirement -- and possibly also to demonstrate his
commitment to the project.
And -- here I get to demonstrate my powerful hindsight -- the demos
surfaced in late March or early April, followed in May by the
announcement by Capitol of a new recording contract with Brian Wilson
and a release date for "That Lucky Old Sun".
