Dylan,

Typically, blues harmonica players play "cross harp" which means they use
a 
harmonica that's in a different key than the song, always a 5th LOWER. So
if 
you're playing a blues in G, you'd use a C harp. Thus, when starting on a
G 
note, you'd have G A B C D E F G which is G mixolydian. Typically, blues 
harmonicas are blues harps and diatonic harps, so you really only have one

"scale" you can play - whatever the harp is keyed to. However, the cross 
harp method gives you a "blue note" in the lowered 7th (F, using a C harp
in 
the key of G).

If you were using a fully chromatic harmonica you could (and typically 
would) play the Mixolydian mode of G, C, and D for your I IV and V 
respectively, but a chromatic harp would also give you the ability to 
include other blue notes (Blues scales) as well. I think that might be a 
little beyond what you were asking here though.
